Pumpkin Chocolate Chip Cake

2 C. all purpose flour
2 C. sugar (coconut)
2 tsp baking powder
2 tsp baking soda
1/2 T. cinnamon
1 C oil
4 eggs
2 C. pumpkin (cooked & mashed)
1 C. chopped nuts (walnuts work great)
1 C. dark chocolate chips
& Love :0)


Mix together the sugar and eggs.

Add the oil, stir well.

Combine with all dry ingredients and mix until the lumps are gone. (If you would like to make this Gluten Free, just substitute the flour!)

Add the nuts and chocolate chips.

Bake in a greased bread pan or muffin tins at 350 F (175 C) for 60 min (or until inserted knife comes out clean.)

Eat and enjoy.
